Did you know extra virgin olive oil is safe to cook with? A common misconception surrounds EVOO’s smoke point, in which high-temperature methods such as frying or sautéing in EVOO are considered unsafe. This is not true.

The smoking point for a premium quality, fresh EVOO is estimated to be between 195 to 210 degrees Celsius, which is well above the temperature for most high-heat cooking. The EVOO may lose some of its unique flavour, but it will not become unhealthy. Freshness of the oil is key and Australia produces some of the highest-grade EVOO in the world, including here in Victoria.
